Why can't we just respect other's beliefs?

There's a difference between respecting a person and their beliefs and believing they're right. Logically only one version of reality can be the true one. If someone is convinced about a certain world view, logically they must believe that other world views are at least partially wrong. If they believe there are consequences for not believing the truth, then if they care at all about other people they should want them to know the truth.
