Not sure if I should use my time on her?

I've had a big crush on this girl for a couple years. We go to the same college. She also bartends at a local restaurant, so I've talked to her a couple times. I just never approached her because I couldn't tell if she was gay, plus she's so hot she basically leaves me speechless. So when I saw her at a gay club a couple weeks ago I was stoked! We talked for a while, she got my number. She's been texting me pretty much everyday since we've met. Nothing serious, just "how was your day" kind of texts. She would like to take me out this week, but here is where I'm aprehensive. From her facebook page I can tell she just got out of a 2 year on and off again relationship with an amazingly beautiful girl. It seems they broke up maybe 3 weeks ago. I really like this girl, but I'm not sure if I should date her. How long should you wait to date a girl after she's gotten out of a relationship? I don't want to be a rebound, I don't want to get my heartbroken, of course.
